The Apple Watch Series 7 is Bluetooth 5.0, which can connect to another device via Bluetooth up to 800 feet (240 meters).
I decided to put the Apple Watch Bluetooth distance to the test for users like you and me who want to know the real number.
I got my camera out, set it to record, then my iPhone where the camera is, got out my tape measure, and started walking until my Apple Watch disconnected from my iPhone.

The Apple Watch Series 7 is Bluetooth 5.0, meaning the watch can be up to 800 feet away from the iPhone. However, during testing, the Apple Watch Series 7 stopped connecting to the iPhone from 262 feet away in an area with little obstruction for the Bluetooth signal.
I used a 20-meter (65 feet 7.5 inches) measuring tape in my video. I counted the Bluetooth distance to be roughly four complete tapes equaling 262 feet (80 meters).
This process is similar to when I did a similar test for the AirPods Pro, which is also Bluetooth 5.
I found the AirPods Pro to disconnect at around 300 feet, meaning the actual distance of Bluetooth 5.0, which both the Apple Watch and AirPods Pro use is about 262-310 feet, less than half of what Bluetooth 5.0 claims of 800 feet.
You can see in the video I’m not in an area with a lot of obstruction to the Bluetooth signal, like in the middle of a crowded city full of buildings. The signal would be weaker in a place full of obstacles like downtown New York.
